“EOLIA” Kalamata olives are harvested by hand, once placed in closed tanks with brine made from water of mount Taygetos and sea salt to remove the bitterness with mild and natural way, without scratches.

Olives are not rinsed from water and retain their beneficial substances and their natural flavour.

After fermetation olives are resceened and packed in brine of sea salt and traditional vinegar.
